The iconic Donnybrook Hotel sits proudly at the entrance to Lithgow. After a long tenure as the guiding hands of the establishment, John and Cathy Pillans have handed over the keys to a new face, Lance Miles.
Lance has had a varied career over the last 20 years, starting out with a 10 year stint in the army, followed by 12 years in the private sector in management roles.
With his family being located in Lithgow for the past 23 years, Lithgow has been like a second home for Lance even though he loved Sydney. He regularly visited the area to see his parents and siblings and, when the time came to make a change, there was no other choice on the list.
After his time working for other people, Lance was looking for a change in career and decided that a pub sounded like a very enjoyable business to be involved in – but not just any pub, a regional pub. A pub where you could get to know the locals and the town. The opportunity at the Donnybrook was just the ticket.
As a father of two young boys, he wanted to be able to provide them with the good wholesome experience that growing up in a regional area can provide.
“Cathy and John have been very supportive during the transition,” Lance said. As a first time pub owner, it is something he has greatly appreciated.
When asked why local patrons should come check out the Donnybrook, Lance had the perfect way to sum it up, “The beer is cold, the fires are hot, the staff are welcoming and the patrons are a great bunch of folks – at 42 I’m exactly where I want to be, surrounded by supportive family and new friends. I am really looking forward to this next chapter of my life.”
The Donnybrook’s Black Cow Bistro is open for lunch 12-2 Wednesday – Saturday, dinner from 6pm Wednesday – Saturday, with the pub open 7 days from 10am till late.
